Apicius 2018 Conference Program is available for download
Conference theme:
The 2018 theme is "Health, Wellness, and Non-Hotel Lodging Trends in the Hospitality Industry." Apicius, the hospitality division of Florence University of the Arts, Conference topics will address the three cornerstones of the Apicius educational mission:
- Understanding Tradition for implementing Innovation
- Cultural Diversity
- Community Engagement
The 2018 subtheme will focus on topics and perspectives related to health, wellness, and non-hotel lodging trends as outlined in the conference call for papers.

Conference program:
The 2018 Apicius conference program is available for download. The conference will focus on wellness tourism and non-hotel lodging. The keynote speaker is Kevin Murphy chair, Hospitality Services Department Rosen College of Hospitality Management, University of Central Florida. During the conference there will be a book presentation on “The Value of Study Abroad Externships in Hospitality Education: Experiential Learning.” The conference will also feature a presentation and tasting session with Apicius Culinary Arts & Baking and Pastry Students along with panels discussing the rise of local food in the United Sates, new trends in accommodations, all focused on health and wellness.
